RECIPE: My Gluten Free Strawberry Milkshake Cupcakes with Baileys Buttercream.

Hi all! I know a few of you loved my banana milkshake flavoured cupcakes I did a while back, and I thought that I would do a strawberry milkshake version too!

I’ve been eating a lot of strawberries recently, I think I might turn into one. But before I do, I will give you the recipe to these bad boys.

These are strawberry milkshake flavoured, with Baileys Strawberries and Cream buttercream to top them with. 

I know some of you don’t drink alcohol, but you can always replace the Baileys with milk if you’d like.

To make them taste like strawberry milkshake, I added some Strawberry Milkshake powder. Be careful to check the ingredients, but for mine I used Nesquik as it says gluten free on the label over here in the UK.

So let’s get started!

Ingredients

For the cupcakes – Makes approx 8

  • 110g Caster sugar
  • 110g  Margarine
  • 2 Medium eggs
  • 110g Gluten free self raising flour
  • 1/2tsp Baking powder
  • 1tsp Xanthan gum
  • 1tbsp Strawberry Flavoured Nesquik Milkshake Powder

For the Buttercream

  • 85g Butter
  • 255g Icing sugar (sifted)
  • 1tbsp  Strawberry Flavoured Nesquik Milkshake Powder
  • 1-2tbsp Baileys Strawberries and Cream (if alcohol free, just use milk)
  • Pink food colouring
  • Strawberries, to decorate

Method

  1. Preheat the oven to 180°c and line a cupcake tray with paper cases.
  2. Cream together the butter and sugar until fluffy.
  3. Beat in the eggs, one by one, until well combined.
  4. Then mix in the rest of the dry ingredients until you have a smooth batter. 
  5. Transfer the batter to the cupcake cases, and bake for 15 minutes. 
  6. Leave the cupcakes to cool completely. 
  7. Beat the butter until soft.
  8. Bit by bit, beat in the icing sugar.
  9. Next, mix in the Nesquik powder, Baileys and food colouring until all combined and you have a smooth pink buttercream. 
  10. Transfer the buttercream to a piping bag fitted with a star nozzle and swirl it on top of the cupcakes. Top with a delicious little strawberry!
  11. Relax and enjoy your tasty cupcakes!
