I normally post a really interesting paragraph about my recipe, but to be honest, I just really fancied making something different.
These cheesecake brownie bites are so delicious, with a gooey chocolatey brownie base, and the indulgent strawberry cheesecake topping. They’re too good to resist! You need to try these, and it’s something different than the usual dry, bland gluten free brownie you often get. (You will find an electric hand mixer VERY helpful for this recipe)
Cheesecake is so easy to make, and if you didn’t want to make the brownies from scratch, you can easily substitute it for a gluten free brownie mix! You’ll have to resist eating them as soon as they’re made though, because you’ll have to chill it for several hours until the cheesecake set.
Gluten Free Strawberries and Cream Brownie Bites)

Ingredients
For the Brownies
- 100g Melted butter
- 175g Caster Sugar
- 2 Medium Free Range Eggs
- 50g Gluten Free Plain Flour
- 75g Cocoa Powder
- 1tsp Xanthan Gum
- 1tsp Baking Powder
- 1tsp Vanilla
- 50g White Chocolate Chips
For the Cheesecake Topping
- 225g Cream Cheese (I used full fat Philadelphia)
- 75g Icing Sugar
- 85g Strawberries, plus 8 to decorate
- 125ml Double Cream
- 1tsp Vanilla

- Preheat the oven to 180°c
- Mix the melted butter and sugar together.
- Using a whisk, beat in the eggs, one at a time.
- Pour in the vanilla, and then fold in the rest of the dry ingredients.
- Next, add in the chocolate chips and mix until well combined. .
- Pour the brownie batter onto a lined baking tin, I used a 10″x8″ traybake tin.
- Bake for around 20 minutes.
- Leave to cool completely and leave in the tin.
- For the Cheesecake topping, using an electric mixer, mix the cream cheese and icing sugar together.
- Blend the 85g of strawberries, and add this to the cream cheese mixture, mixing with your hand mixer until well combined and thick.
- In a separate bowl, mix the double cream and vanilla, and continue mixing until you get soft peaks.
- Fold the double cream into the cheesecake mixture, and then spread this evenly over the cooled brownies.
- Leave for several hours, or overnight until the cheesecake is set.
- Slice into Squares 2″x 2″, decorate with the remaining strawberries, chopped in half, on top (as pictured).
