RECIPE: Gluten Free Apple Crumble Yorkies [AD]

AD – This post contains gifted items from The Real Yorkshire Pudding Co

Yorkshire puddings are normally a roast dinner ESSENTIAL in my house, but up until recently, they’ve also become a cheeky dessert. Judge me all you want, I don’t care.

It came about as a happy accident and I’ve never looked at a Yorkshire Pudding in the same, gravy filled way, ever again. The possibilities are rather endless!

I decided to make a yummy apple crumble inside them. Served hot and paired perfectly with a vanilla ice cream, they’re an absolute game-changer!

Don’t worry, you don’t have to faff around and make your own, because The Real Yorkshire Pudding Company have got your back!

They do lots of Chilled Gluten Free Yorkshire Puddings, ranging from large, to small and even toad in the hole!

For these little delights, I used a 4 pack of their Large Gluten Free Yorkshire puddings. The beauty of them is that nobody can even tell they’re gluten free, so shhh, nobody needs to know!

You can find them in Sainsbury’s, Morrison’s, Tesco and online at Ocado.

  • 3 Medium apples, chopped into small cubes
  • 1tsp Lemon juice
  • 1tbsp Caster sugar
  • 1tsp Ground cinnamon

For the crumble topping:

  • 50g Cold unsalted butter, cut into chunks.
  • 50g Caster sugar
  • 80g Plain gluten free flour

For the Oat Topping:

  • 2tbsp Gluten Free Oats
  • 2tbsp Light brown sugar

Directions

  1. Pre-heat your oven to 170°c fan/ Gas Mark 5 / 190°c Conventional oven.
  2. Add all of the filling ingredients to a saucepan, and heat on a medium/low setting until softened, stirring occasionally until softened.
  3. While they are cooking, make your crumble. In a bowl add the sugar and flour. Add the cold butter and rub together with your hands until you get a breadcrumb like texture.
  4. In a separate bowl, make the topping and combine the light brown sugar and oats.
  5. Transfer your Yorkshire puddings onto a non-stick or lined baking tray.
  6. Spoon the apple filling into the centre of the Yorkshire puddings.
  7. Spoon the crumble on top, followed by the oat topping.
  8. Bake for 15 minutes until golden brown.

Perfect served hot with whipped cream, custard, or vanilla ice cream!
