This twist on a classic Easter Simnel cake is really easy to make, and perfect with a cuppa to finish off the Bank Holiday weekend!
Gluten Free Simnel Blondies
A delightful twist on a classic Easter bake

- 170g Margarine, softened
- 200g Light Brown sugar
- 80g caster sugar
- 250g Plain gluten free flour
- 1tsp Vanilla extract
- 2 Medium Eggs
- 1/2 tsp Xanthan gum
- 100g white Chocolate chips
- 80g Chopped glace cherries
- 75g Dried mixed fruit
- 120g Ready to roll Marzipan
Method
- Preheat the oven to 160*c Line or grease an 8inch X 8inch square baking tin.
- Beat together the margarine and the sugars until fluffy.
- Mix in the vanilla and beat in the eggs.
- Fold in the flour, Xanthan gum, all of the fruit and and chocolate chips until all the ingredients are well combined.
- Roll out your marzipan to the thickness of a £1 coin and to the size of the baking tin.
- Evenly distribute half of the cake batter into the tin, flattening with the back of a spoon. Place the marzipan on top of this, then distribute the rest of the batter on the top, again smoothing with the back of your spoon.
- Bake for approximately 30 minutes. You will know they are done when they’re the slightest bit jiggly on the top.
- Leave to cool completely, I recommend leaving them overnigh.
- When cooled, slice into 16 square slices and serve.
