Gluten Free Simnel Blondie Traybake Recipe

This twist on a classic Easter Simnel cake is really easy to make, and perfect with a cuppa to finish off the Bank Holiday weekend!

Gluten Free Simnel Blondies

A delightful twist on a classic Easter bake

Ingredients

  • 170g Margarine, softened
  • 200g Light Brown sugar 
  • 80g caster sugar
  • 250g Plain gluten free flour
  • 1tsp Vanilla extract  
  • 2 Medium Eggs  
  • 1/2 tsp Xanthan gum 
  • 100g white Chocolate chips
  • 80g Chopped glace cherries
  • 75g Dried mixed fruit
  • 120g Ready to roll Marzipan

Method

  1. Preheat the oven to 160*c Line or grease an 8inch X 8inch square baking tin. 
  2. Beat together the margarine and the sugars until fluffy.
  3. Mix in the vanilla and beat in the eggs. 
  4. Fold in the flour, Xanthan gum, all of the fruit and and chocolate chips until all the ingredients are well combined.
  5. Roll out your marzipan to the thickness of a £1 coin and to the size of the baking tin. 
  6. Evenly distribute half of the cake batter into the tin, flattening with the back of a spoon. Place the marzipan on top of this, then distribute the rest of the batter on the top, again smoothing with the back of your spoon. 
  7. Bake for approximately 30 minutes. You will know they are done when they’re the slightest bit jiggly on the top.  
  8. Leave to cool completely, I recommend leaving them overnigh. 
  9. When cooled, slice into 16 square slices and serve.
