RECIPE: Gluten Free & Vegan Southern Style Chicken (Tofu)

Since doing Veganuary, I’ve not REALLY had a chance to make anything with the trusty vegan staple, tofu. I’ve already had meat-eaters turn up their nose at Tofu without even trying it, but I quite like it.

I also miss KFC a lot since becoming gluten free, and one of my kitchen cupboard staples is the Spice N Tice Southern Style Chicken spice mix. Now of course, I’m doing this veganuary challenge, I wanted to try it with Tofu. And it worked out really well.

The mixes have a shopping list, ingredients and the recipe on a card, however, when converting it to a vegan recipe, I had to use an alternative to chicken and eggs. Which was so easy!

To coat the tofu, I used the spice mix and some gluten free breadcrumbs. I am currently finding it difficult to find a gluten free AND vegan bread in the supermarket at the minute (they’re all sold out!), so I crushed up some plain gluten free cornflakes and mixed the spice mix into those. It worked just as well!

Gluten Free & Vegan Southern Style Tofu

Ingredients

  • 1 block 280g Extra Firm Tofu.
  • 6 tbsp Cornflour
  • 150ml Soya milk
  • 1 Packet of Spice N Tice Southern Style Chicken
  • 150g Gluten free breadcrumbs (or alternative, like crushed plain corn flakes)
  • Low calorie oil spray

Directions

  1. Pre-heat the oven to 180°C
  2. Remove the Tofu from the packaging and drain.
  3. Cut the tofu into 6 even pieces. I sliced mine down the middle of the block to make two pieces, and then I cut down each piece from the top to make 6 flat rectangles.
  4. Put 3tbsp of the cornflour on a plate, and sprinkle 1/4 of the spice mix onto it. Mix these together well.
  5. Put another 3tbsp of cornflour in a bowl, add in 1/4 of the spice mix (leaving 1/2 left) and mix the Soya milk into it.
  6. In another bowl, mix your breadcrumbs and the remainder of the spice mix.
  7. Coat each piece of tofu with the flour mix, then dip it into the milk/flour/spice mix. Finally, Coat the tofu evenly with the breadcrumbs.
  8. Place all of the coated pieces of tofu onto a baking tray that has been sprayed with the low cal spray. Spray the tops of the tofu with the low cal spray.
  9. Bake for 20 minutes, until the tofu is crispy and golden brown. Serve with some of your favourite fakeaway sides!

So what do you think? Vegan food doesn’t have to be all buddha bowls and falafel! Sometimes a little bit of what you fancy does you good!
